Ingredients

The ingredients are:
  • 1 1/4 cups whole wheat flour
  • 3/4 cup all-purpose flour (white)
  • 3 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoons salt
  • 2 cups milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter (melted plus you will need more for frying)
  • 3/4 pound bananas (3 bananas, peeled and sliced into 1/4 inch rounds)
  • 3 1/2 ounces pecan halves (1 cup)
  • Maple syrup for serving

How to Make

  • Step 1: Preheat oven to 300 degrees F. and place a baking sheet in the oven.

  • Step 2: In a bowl whisk together the first 5 ingredients (flour -salt). In a separate bowl whisk together the wet ingredients (milk - vanilla)and then whisk in the 1/4 cup melted butter. Stir wet ingredients into the dry ingredients.

  • Step 3: Heat a large griddle or skillet over medium heat; brush with butter.

  • Step 4: For each pancake, drop 1/4 cup of the batter onto griddle. Arrange 3 banana rounds and 3 pecan halves on each pancake. Cook until brown (2-5 minutes) and then transfer to baking sheet which is in the oven. Repeat with remaining batter.

  • Step 5: Serve with maple syrup and butter.
