  • 1 (9-inch) pie crust (baked and cooled)
  • 2 tablespoons unsalted butter
  • 1 cup light brown sugar, packed
  • 1/2 cup water (hot)
  • 2 large egg yolks
  • 2 tablespoons all-purpose flour
  • 2 cups evaporated milk (NOT sweetened condensed milk)
  • 1 teaspoon salt
  • 3 tablespoons cornstarch
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Brown butter in saucepan over low heat. Add brown sugar and hot water (careful-it may splatter).

  • Step 2: In a bowl, beat egg yolks, flour, evaporated milk, salt and cornstarch with a whisk.

  • Step 3: Add milk mixture slowly to butter mixture, whisking while doing so.

  • Step 4: Cook over medium heat until thick, stirring constantly.

  • Step 5: Remove from heat; add vanilla. Pour into prepared crust and refrigerate for 2 hours.
