Ingredients

The ingredients are:
  • 1 1/2 pounds Italian sausage
  • 1/4 cup hot water
  • 8 ounces fresh mushrooms (sliced)
  • 1 (3 ounce) carrot, diced
  • 1 (8 ounce) yellow onion, minced
  • 2 tablespoons olive oil
  • 2 cans (28 ounce) tomatoes (ready-cut peeled)
  • 1 can (6 ounce) tomato paste
  • 1 cup dry red wine
  • 3 tablespoons fresh parsley, chopped
  • 1 teaspoon basil
  • 1/2 teaspoon oregano
  • Fresh ground black pepper

How to Make

  • Step 1: Place sausage in a skillet. Add hot water, cover, and cook for 10 minutes.

  • Step 2: Remove sausages and separate links if necessary. Discard drippings.

  • Step 3: In a large pot or Dutch Oven, saute mushrooms, carrot and onion just until al dente.

  • Step 4: Add sausages.

  • Step 5: Add remaining ingredients. Cover and simmer 1 hour, or until thickened, stirring occasionally.

  • Step 6: Serve over pasta, or by itself with hot crusty bread.
