  • 1 tablespoon olive oil
  • 1 medium (6 ounce) potato (cubed)
  • 1/2 pound Italian sausage (sweet)
  • 1 small (4 ounce) yellow onion, chopped
  • 1 small green (6 ounce) bell pepper, seeded and chopped
  • 1 small sweet (6 ounce) red pepper, seeded and chopped
  • 8 large eggs
  • 2 tablespoons milk
  • 1/8 teaspoon oregano
  • 1 tomatoes, seeded and chopped
  • 1/4 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh parsley, chopped, for garnish

How to Make

  • Step 1: Heat olive oil in a large frying pan and add the potato. Cook over medium heat, stirring occasionally.

  • Step 2: Remove sausage casings and crumble meat into the pan. Cook, stirring, until lightly browned.

  • Step 3: Add onion and peppers. Cook until onion is softened and potatoes are done.

  • Step 4: Beat eggs, milk and oregano together.

  • Step 5: Add egg mixture, tomato and mozzarella all at once.

  • Step 6: Reduce heat and cook, stirring lightly, until eggs are soft and fluffy.

  • Step 7: Top with grated cheese and parsley.
