The ingredients are:
  • 2 tablespoons olive oil
  • 8 ounces chopped yellow onions (1 1/2 cups)
  • 1 garlic clove, minced
  • 2 1/2 cups cider (hard alcoholic)
  • Salt and pepper
  • 24 ounces halibut fish (four steaks, 6 ounces each)
  • 1 lemon, juice of
  • 1 lemon, sliced
  • 1 pound tomatoes, peeled and sliced
  • Parsley (1 handful of minced)
  • Butter

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Heat oil in a skillet and saute onions until pale gold.

  • Step 3: Add garlic and cook a little longer.

  • Step 4: Stir in cider.

  • Step 5: Add salt and pepper to taste.

  • Step 6: Place fish in a greased baking dish.

  • Step 7: Add lemon juice.

  • Step 8: Arrange lemon slices over the fish.

  • Step 9: Pour onion-cider mixture over fish.

  • Step 10: Place tomatoes and parsley on top.

  • Step 11: Dot with butter.

  • Step 12: Bake for 20 minutes, or until cooked.
