Ingredients

The ingredients are:
  • 16 ounces buffalo (two 8 oz buffalo steaks, New York strip, or top sirloin)
  • 1 tablespoon oil
  • Salt, dash
  • Pepper, dash
  • 1 teaspoon cracked pepper
  • 1/4 cup garlic, mashed
  • 1/2 cup green onions, minced

How to Make

  • Step 1: In a small nonstick skillet, heat oil. Add garlic. Cook and stir 2 minutes or until tender, but not browned.

  • Step 2: Add onions. Continue cooking and stirring 2 minutes or until onions are tender.

  • Step 3: Season with salt and pepper; cool completely.

  • Step 4: Meanwhile with a sharp knife, cut a pocket in each bison steak.

  • Step 5: Start 1/2 inch from one long side of steak and cut horizontally through center of steak to within 1/2 inch of each side.

  • Step 6: Rub steak on outside with 1 teaspoon cracked pepper.

  • Step 7: Spread half of garlic mixture inside each steak pocket

  • Step 8: Secure opening with wooden toothpicks.

  • Step 9: Preheat broiler.

  • Step 10: Position broiler pan so surface of steak is 5 inches from heat source.

  • Step 11: Broil until top side is brown approximately 8-10 minutes.

  • Step 12: Turn and brown other side for 5-7 minutes for medium doneness.
