  • 2 cup beef broth (bouillon)
  • 2 cups chopped tomatoes (canned)
  • 1/2 teaspoon pepper
  • 1 cup chopped carrots
  • 1 whole (8 ounce) yellow onion, diced
  • 1/2 cup chopped leeks
  • TOPPINGS
  • 2 whole chopped (16 ounces) avocado
  • 1/2 cup sour cream
  • 2 tablespoons minced chives
  • 2 tablespoons sherry
  • 1 tablespoon lemon juice

How to Make

  • Step 1: Bring bouillon, vegetables, salt and pepper to a boil; cover and simmer 1 hour (30 minutes in pressure cooker).

  • Step 3: Add sherry and lemon juice, put in bowl add some avocado, top with sour cream and chive.

  • Step 4: Can be served hot or cold.
