Ingredients

The ingredients are:
  • 1/2 cup cilantro, finely chopped (leaves)
  • 1 garlic clove, minced
  • 4 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 24 ounces salmon steaks (four steaks, 6 ounces each, 3/4" thick)

How to Make

  • Step 1: Preheat broiler. Place rack about 6 inches below element. Coat a broiler pan with nonstick cooking spray.

  • Step 2: Combine cilantro, garlic, lime juice, zest oil and salt in bowl. Reserve 2 tablespoons.

  • Step 3: Pour remainder over fish on plate. Let stand, covered, 10 minutes.

  • Step 4: Place salmon on pan. Brush with 1 tablespoon marinade.

  • Step 5: Broil for 3-4 minutes. Turn steaks over. Brush with remaining tablespoon marinade. Broil 3-4 more minutes or until cooked through.
