Ingredients

The ingredients are:
  • 12 ounces zucchini (2 cups, shredded)
  • 1/2 cup finely chopped (4 ounces) yellow onion
  • 3 strips (3 ounces) bacon (in 1/2-inch dice)
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup self-rising flour
  • 1 tablespoon chives, minced
  • 4 large eggs (slightly beaten with black pepper)
  • 1/4 teaspoon black pepper
  • TOPPING
  • 8 ounces portabella mushroom (caps, 2 large)
  • 1/2 cup cheese, shredded

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: In a large bowl, combine all ingredients -- in the order listed. Mix well after each addition.

  • Step 3: Put everything in an 9 inch cake pan that you have sprayed with pam and buttered. Top with the mushroom caps and top with cheese.

  • Step 4: Bake for 40-45 minutes, or until golden brown.

  • Step 5: Check the bottom. It sometimes browns faster.
