Ingredients

The ingredients are:
  • 4 large eggs
  • 2 cups granulated sugar,
  • 1 cup oil (canola oil, use half applesauce)
  • 2 cups grated zucchini (unpeeled, coarsely grated zucchini, drained slightly)
  • 1 lemon, grated zest of
  • 1 lemon (juice of)
  • 3 1/2 cups all-purpose (unbleached)
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 4 teaspoons baking powder
  • 3.5 ounces blueberries (1 cup or more, frozen Maine wild blueberries, mixed in tablespoon flour so they dont sink)

How to Make

  • Step 1: Preheat the oven to 350 degrees F.

  • Step 2: Beat the eggs.

  • Step 3: Add the sugar and beat until well mixed.

  • Step 4: Add the oil and beat.

  • Step 5: Add the zucchini, lemon juice, and lemon zest and mix well.

  • Step 6: In a separate bowl combine the flour, salt, soda, and baking powder and add to the wet ingredients, mixing well.

  • Step 7: Gently fold in the floured blueberries.

  • Step 8: Pour the batter into 2 greased and floured 5x9-inch loaf pans.

  • Step 9: Bake approximately 55 minutes or until a knife inserted into the center of one of the loaves comes out clean.

  • Step 10: Remove from the oven and cool 10 minutes,
