Ingredients

  • CRUST
  • 2 cups all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 teaspoons lemon zest
  • 1/8 teaspoon salt
  • 1/2 cup butter (cold, cubed)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • BLUEBERRY FILLING
  • 10 1/2 ounces blueberries (3 cups, fresh)
  • 1/3 to 1/2 cup granulated sugar
  • 1/8 teaspoon ground nutmeg
  • CRUMB TOPPING
  • 5 tablespoons butter (softened)
  • 1/2 cup packed brown sugar
  • 3/4 cup all-purpose flour
  • 1/4 cup confectioners’ sugar for dusting

How to Make

  • TO MAKE THE CRUST

  • Step 1: In a medium bowl, stir together the 2 cups flour, 2 tablespoons white sugar, lemon zest and salt. Cut in the 1/2 cup butter until the mixture resembles coarse crumbs. Beat egg and vanilla together; stir into the crumb mixture form a soft dough. Press into the bottom of a buttered 9×13 baking pan.

  • Step 2: Bake at 375 for 12 to 15 minutes. Remove from oven and set aside to cool slightly.

  • TO MAKE THE BLUEBERRY FILLING

  • Step 3: Sprinkle blueberries over the crust. Combine the 1/3 to 1/2 cup granulated sugar and nutmeg; sprinkle over the blueberries.

  • TO MAKE THE TOPPING

  • Step 4: In a mixing bowl, cream together the 5 tablespoons butter and brown sugar until smooth. Mix in the flour, so that the mixture is crumbly. Sprinkle over the blueberry layer.

  • Step 5: Bake at 375 for 20 to 25 minutes. Cool and then dust with confectioners’ sugar before cutting into bars
