  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 cup sharp cheddar cheese, grated
  • 1/3 cup parmesan cheese, grated
  • 1/3 cup pecans (chopped)
  • 1 large egg
  • 1 cup buttermilk
  • 1/4 cup oil
  • 2 whole (12 ounces) apple, grated

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: Grease muffin pans.

  • Step 3: COMBINE flour, sugar, baking powder, baking soda, salt, cinnamon and cheeses in large mixing bowl.

  • Step 4: BEAT egg, buttermilk, oil and apple together thoroughly.

  • Step 5: ADD liquid ingredients all at once to dry ingredients. Add nuts. Stir just until moistened.

  • Step 6: FILL greased muffin cups 3/4 full.

  • Step 7: SPRINKLE tops with 1/4 cup cheddar cheese if desired.

  • Step 8: BAKE at 400°F for 18-23 minutes or until top springs back when lightly touched.
