Step 1: Heat oil in a large stockpot over medium-high heat.
Step 2: Add onion and peppers and saute for 5 minutes, or until the onion is soft and translucent, stirring occasionally.
Step 3: Add the garlic and saute for an additional minute, stirring occasionally.
Step 4: Add the diced green chilies, chicken stock, hominy, chicken, cumin, cajun seasoning and salt, and stir to combine.
Step 5: Continue heating until the soup reaches a simmer.
Step 6: Reduce heat to medium-low and simmer for at least 15 minutes.
Step 7: Taste, and season with extra salt and pepper if needed.
Step 8: Add garnish if using.
