Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 small (4 ounce) yellow onion (peeled and diced)
  • 1 large poblano pepper, cored and diced
  • 1/2 diced (4 ounces) bell pepper (cored)
  • 3 cloves garlic, minced
  • 1 can (4 ounces) diced green chilies
  • 6 cups chicken stock
  • 2 cans (14 ounce) white hominy (drained and rinsed)
  • 3 cups shredded or cubed (12 ounces) cooked chicken
  • 2 teaspoons ground cumin
  • 2 teaspoons cajun seasoning
  • 1 teaspoon salt, or more/less to taste
  • Optional: Garnish with diced avocado, chopped fresh cilantro, crumbled cotija cheese, thinly-sliced or julienned radishes, lime wedges

How to Make

  • Step 1: Heat oil in a large stockpot over medium-high heat.

  • Step 2: Add onion and peppers and saute for 5 minutes, or until the onion is soft and translucent, stirring occasionally.

  • Step 3: Add the garlic and saute for an additional minute, stirring occasionally.

  • Step 4: Add the diced green chilies, chicken stock, hominy, chicken, cumin, cajun seasoning and salt, and stir to combine.

  • Step 5: Continue heating until the soup reaches a simmer.

  • Step 6: Reduce heat to medium-low and simmer for at least 15 minutes.

  • Step 7: Taste, and season with extra salt and pepper if needed.

  • Step 8: Add garnish if using.
