Ingredients

The ingredients are:
  • 1 1/3 cups all-purpose flour
  • 1/4 cup ground walnuts
  • 8 tablespoons butter (at room temperature)
  • 5 egg yolks (divided)
  • 1/3 cup milk
  • 1 tablespoon milk
  • 3 ounces Gruyere cheese (coarsely grated)
  • 1 tablespoon cornstarch
  • 3 tablespoons light cream
  • Salt
  • 1/3 cup heavy cream

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Mix flour and walnuts. Add butter and 2 egg yolks. Mix with your hands until it becomes a smooth dough. Divide into 14-18 pieces.

  • Step 3: Lightly flour your fingers and press each piece of dough over the bottom and sides of a 2"-2 1/2" fluted tart tin. Prick surface of dough with a fork.

  • Step 4: Bake for 15-20 minutes, or until golden.

  • Step 5: Let cool in tins a few minutes, then remove very carefully.

  • Step 6: Place milk and cheese in a sauce pan and heat until cheese melts and mixture comes to a boil, stirring constantly.

  • Step 7: Combine remaining egg yolks with cornstarch and light cream.

  • Step 8: Gradually add to cheese mixture and heat to just under the boiling point. Add salt, cool, and chill.

  • Step 9: Whip heavy cream until stiff peaks form. Fold into the cheese mixture.

  • Step 10: Pipe or spoon mixture into tart shells.

  • Step 11: Refrigerate until ready to serve.
