Ingredients

The ingredients are:
  • 1 hubbard (4 pounds) squash (diced)
  • 4 green onions (with tops, chopped)
  • 1 quart water
  • 2 tablespoons maple syrup
  • 1 (3 ounce) cucumber (sliced 1/2" thick)
  • 1 teaspoon salt (it called for tablespoon, wowser)
  • 1/4 teaspoon black pepper

How to Make

  • Step 1: Place green onions , water & syrup into a large soup pot, simmer for 40 minutes or until the squash is tender.

  • Step 2: Add the cucumbers. Use a blender to mix everything.

  • Step 3: Put the mixture back into the soup pot & season with salt & pepper.

  • Step 4: Simmer for 5 to 10 minutes.
