  • 1 teaspoon salt
  • 1/2 teaspoon pepper, to taste
  • 6 tablespoons butter
  • CRAB
  • 1 pound crab meat
  • MAYONNAISE
  • 1 cup mayonnaise
  • 1 shallot, minced
  • 1 teaspoon Cognac
  • 2 tablespoons chili sauce
  • Worcestershire sauce (dash)
  • Mustard (dash)
  • 2 tablespoons lemon juice
  • Garnish
  • 2 whole (12 ounces) tomatoes (wedged in 8ths)
  • 1/4 cup parsley, minced

How to Make

  • Step 1: Mix up mayo mixture, the chill.

  • Step 2: Heat pan, melt some butter. Beat egg mixture, divide in 1/4, heat omelet, flip.

  • Step 3: Mix crab in mayo, put down center of each omelet.

  • Step 4: Sprinkle parsley on top.

  • Step 5: Garnish with tomato wedges.
