Ingredients

The ingredients are:
  • 2 1/4 pounds potatoes (6 potatoes, peeled and chopped)
  • 6 cups water
  • 1/2 pound dandelions (stems and leaves, washed)
  • 1 (8 ounce) yellow onion (chopped, this is my spin)
  • 1 tablespoon oil
  • 2 tablespoon butter
  • 1 teaspoon salt
  • 2 egg yolks

How to Make

  • Step 1: I caramelized onions in oil first then added water and potatoes, this was not in kathys recipe, I just like it.

  • Step 2: Place the potatoes in water cook 15 minutes, add salt and chopped greens, cook 15 minutes more. Turn off soup.

  • Step 3: Mix egg yolks with butter then add to soup blending.
