Ingredients

The ingredients are:
  • 1 box lemon flavor (3 ounce) Jell-O gelatin
  • 1 cup boiling water
  • 8 ounces cream cheese (room temperature)
  • 1 1/2 cup granulated sugar
  • 5 tablespoons lemon juice
  • 1 can (12 ounce) evaporated milk (well chilled)
  • Graham crackers, or vanilla wafer crumbs, crushed

How to Make

  • Step 1: Dissolve Jell-O in boiling water. Cool until slightly thickened.

  • Step 2: Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well.

  • Step 3: In a separate bowl, beat the evaporated milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer.

  • Step 4: Line bottom of 9 x 13-pan with crushed Graham crackers or vanilla wafer crumbs.

  • Step 5: Spread filling over and top with more crushed crackers or wafers. Chill at least 4 hours.
