Ingredients

The ingredients are:
  • 1 1/2 kilogram chicken wings (about 12 cut into 3 use tips for stock or discard)
  • Gingerroot (1 knob, finely minced I use a microplane grater)
  • 2 cloves garlic (finely minced)
  • 1 1/2 teaspoon sambal oelek
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 2 tablespoon oil (vegetable oil)
  • 1 lime (Zest of)
  • GLAZE
  • 1/4 cup rice wine vinegar
  • 1 tablespoons granulated sugar (white)
  • 1/4 cup water
  • 1/4 cup sweet chilli sauce
  • 3 coriander stalks (finely chopped - I wouldn't use OPTIONAL)

How to Make

  • Step 1: In a non-reactive bowl or zip-lock bag combine the chicken with all the ingredients (not including the glaze) and mix together and marinate in the fridge for 2 hours or overnight (I mixed the marinade ingredients in a jug and poured over the wings in the zip-lock bag and gave them a massage before putting in the refrigerator).

  • Step 2: Preheat oven to 180C

  • Step 3: On a large non-stick tray arrange the chicken in one single layer and bake in the oven for 20-30 minutes turning half way to ensure even cooking.

  • Step 4: In the meantime add the glaze ingredients to a small pot and bring to the boil before turning the heat down and simmering for 15 to 20 minutes.

  • Step 5: Once the chicken is cooked remove from the oven and place in a large bowl and immediately pour over the hot glaze and mix well to combine.

  • Step 6: Serve alone or with Asian green and hokkien noodles or other Asian noodles and garnish with coriander.
