Step 1: Cook noodles in a large pot of boiling water until done as per manufacturers instruction and then drain.
Step 2: Meanwhile combine oil and onions in a small skillet and sauté over low heat until tender and then add ginger, cook and stir for 1 to 2 minutes.
Step 3: Mix in peanut butter, soy sauce, water, vinegar, sugar and red pepper flakes and remove from heat.
Step 4: Toss noodles with sauce and serve.
