Ingredients

The ingredients are:
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground coriander
  • 2 garlic cloves, minced
  • 1 pound boneless skinless chicken breast (cut into 1 inch chunks)
  • 3 whole (21 ounces) zucchini (cut into 1" pieces)
  • Cooking spray
  • Garnish
  • Fresh dill (optional)
  • 1/2 teaspoon kosher salt

How to Make

  • Step 1: Combine yogurt, olive oil, lemon juice, cumin, ginger, coriander and garlic. Add the chicken chunks and toss. Let sit for 10 minutes.

  • Step 2: Spray sliced zucchini with cooking spray.

  • Step 3: Thread chicken and zucchini onto skewers, alternating chicken and zucchini.

  • Step 4: Sprinkle with kosher salt.

  • Step 5: Grill for 8 minutes, turning occasionally so all sides are browned.

  • Step 6: Garnish with fresh dill. (optional).
