Ingredients

The ingredients are:
  • 2 tablespoons vegetable oil
  • 1/2 cup onion, chopped
  • 1 cup red bell pepper, chopped
  • 1 garlic clove, finely chopped
  • 1 pound ground turkey
  • 1 (29 ounce) can no salt added diced tomatoes, undrained
  • 1 (15 ounce) can Libby's pumpkin
  • 1 (15 ounce) can tomato sauce
  • 1 (15 1/4) ounce can kidney beans, drained
  • 1 (4 ounce) can diced green chilies
  • 1/2 cup frozen whole kernel corn
  • 1 tablespoon chili powder, or to taste
  • 1 teaspoon cumin
  • 1/2 teaspoon ground black pepper

How to Make

  • Step 1: Over medium high heat add vegetable oil to large saucepan or dutch oven and heat through. Add onion, bell pepper, garlic and cook until tender approximately 7 minutes. Stir mixture frequently. Add ground turkey to vegetables and cook turkey until browned. Drain.

  • Step 2: To turkey and vegetables add remaining ingredients. Bring to a boil then reduce heat to low and cover saucepan or dutch oven. Simmer for 30 minutes stirring occasionally. Ladle into bowls and serve immediately.
