  • Hot pepper citrus dressing (two cups)
  • Orange zest (from 3 oranges, grated)
  • 6 garlic cloves (smashed)
  • 3 pounds chicken (quarters)
  • Sea salt

How to Make

  • Step 1: In a saucepan over low heat warm the dressing and then add the orange zest and the garlic. Remove from heat and allow to steep for 10 minutes

  • Step 2: Arrange the chicken quarters in a large container or baking dish.

  • Step 3: Pour cooled marinade over the chicken; cover and refrigerate overnight or for 24 hours. Bring to room temperature.

  • Step 4: Preheat grill.

  • Step 5: Remove chicken from marinade and sprinkle with the sea salt.

  • Step 6: Cook for 10-20 minutes per side or until chicken is done.
