Step 1: Preheat oven to 350 degrees.
Step 2: Remove excess water from spinach and chop.
Step 3: Heat oil in large pan.
Step 4: Add onion and cook until soft, stirring often.
Step 5: Add ground beef and cook until well browned, stirring often.
Step 6: Add mushrooms,cook for approximately 5 minutes, stirring often.
Step 7: Remove from heat, drain all fat from pan.
Step 8: Add spinach, sour cream, oregano, thyme, and half of each cheese. Stirring well after each addition.
Step 9: Add salt and pepper to taste.
Step 10: Pour into casserole dish and sprinkle remaining cheese on top.
Step 11: Bake for 25 minutes.
