  • 1 can (8 ounce) crushed pineapple (undrained)
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/3 cup whole milk
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar, packed

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Grease a 9-inch baking pan.

  • Step 3: Drain the crushed pineapple reserving 1/3 cup of the juice.

  • Step 4: In a medium mixing bowl combine the flour with baking powder, salt and sugar.

  • Step 5: Add in the reserved pineapple juice, milk, melted butter, eggs and vanilla; using a wooden spoon stir until just moistened (do not over mix).

  • Step 6: Transfer to baking pan.

  • Step 7: Spoon the crushed pineapple over the batter, then sprinkle the brown sugar over the top.

  • Step 8: Bake for 25-30 minutes.

  • Step 9: Cool in the pan.
