Ingredients

The ingredients are:
  • 1 tablespoon sesame oil
  • 1/2 pound boneless skinless chicken breast (two breasts)
  • 2 tablespoons mashed fresh ginger
  • 2 cloves garlic (diced)
  • 1 yellow onion (diced)
  • 3 dried shiitake mushrooms (broken up before cooking)
  • 1 jalapeno pepper (seeds removed and thinly sliced)
  • 8 cups chicken broth
  • 3 green onions (plus extra for serving, sliced)
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1/8 cup chopped napa cabbage
  • 1 tablespoon red pepper flakes
  • 1 (3 ounce) carrot (peeled and sliced into very thin coins)
  • 5 ounces soba noodles
  • 1/8 cup chopped fresh cilantro (for serving)
  • 4 tablespoons hot sauce (sriracha sauce, for serving)

How to Make

  • Step 1: In a large pot, heat sesame oil over medium high heat. Add chicken. Once hot, add ginger, garlic and onion. Saute until fragrant, 2-3 minutes.

  • Step 2: Add jalapeno, mushrooms, broth, cabbage, green onions and red pepper flakes. Cover and simmer 10-15 minutes.

  • Step 3: While broth is simmering, add soba noodles.

  • Step 4: Add soy sauce and rice vinegar. Simmer 1-2 minutes.

  • Step 5: Remove soup from heat and ladle into bowls. Serve alongside sliced green onions, chopped cilantro, and sriracha.
