Step 1: In a large pot, heat sesame oil over medium high heat. Add chicken. Once hot, add ginger, garlic and onion. Saute until fragrant, 2-3 minutes.
Step 2: Add jalapeno, mushrooms, broth, cabbage, green onions and red pepper flakes. Cover and simmer 10-15 minutes.
Step 3: While broth is simmering, add soba noodles.
Step 4: Add soy sauce and rice vinegar. Simmer 1-2 minutes.
Step 5: Remove soup from heat and ladle into bowls. Serve alongside sliced green onions, chopped cilantro, and sriracha.
