Ingredients

The ingredients are:
  • 1 1/2 pound pork tenderloin
  • 2 (10 ounces) tomatoes (chopped)
  • 2 (12 ounces) bell peppers (chopped)
  • 1 yellow onion (chopped)
  • 8 cloves garlic, minced
  • 1 can (680 ml) pasta sauce
  • 2/3 cup fresh grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Garlic powder to taste
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons olive oil

How to Make

  • Step 1: Slice the pork tenderloin into 1/4 inch thick rounds.

  • Step 2: Drizzle 2 tablespoons olive oil in a skillet and bring to medium-high heat and add the pork rounds.

  • Step 3: Season the meat with garlic powder, salt and pepper and brown both sides for about 3 to 4 minutes, until you have a light golden crust.

  • Step 4: Place the cooked rounds in a casserole dish and set aside.

  • Step 5: Drizzle 1 tablespoon olive oil into the same pan and toss in the vegetables, cook until softened while scrapping up the bits left on bottom of pan; pour over the pork slices.

  • Step 6: Sprinkle the dried herbs over the vegetable mixture then pour the pasta sauce over everything.

  • Step 7: Sprinkle the Parmesan cheese evenly over the sauce; cover the casserole dish and cook at 350 degrees Fahrenheit for 2 hours.
