  • SIMPLE SYRUP
  • 1 cup sugar (vanilla sugar)
  • 1 cup water
  • 1/4 teaspoon orange zest
  • 1 teaspoon water (orange blossom water)
  • 1 teaspoon water (rose water)
  • FRAGRANT AVOCADO PUREE
  • 1 avocado (meat only)
  • 5 tablespoons simple syrup
  • 1/4 to 1/2 cup water (adjust as needed)
  • 1 tablespoon water (orange blossom water)
  • STRAWBERRY COULIS
  • 2 cups strawberries
  • 2 to 3 tablespoons water
  • ASHTA
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 bread slices (white, edges trimmed)
  • 3 tablespoons simple syrup
  • 1 teaspoon cornstarch
  • 1 teaspoon water (orange blossom water)
  • 1 teaspoon water (rose water)
  • Sea salt, dash
  • FRAGRANT MANGO PUREE
  • 1 (200 grams) mango (flesh only)
  • 3 tablespoon water
  • 1 tablespoon simple syrup
  • 1 tablespoon water (orange blossom water)
  • TOPPING
  • 1/4 cup almond nuts
  • 1/4 cup pistachio nuts
  • 1/4 cup lemon verbena

How to Make

  • Step 1: Peel, slice, cut the fruits into bites size pieces and place aside for assembly

  • FOR THE SIMPLY SYRUP

  • Step 2: Bring the mixture to a gentle simmer, once all sugar is melted, turn off heat and set aside to cool before using.

  • FOR THE FRAGRANT AVOCADO PUREE

  • Step 3: In a blender, puré all ingredients to get a creamy runny final product. If too thick, add a splash of water at a time. Set aside for assembly.

  • FOR THE STRAWBERRY COULIS

  • Step 4: Purée in a blender, then pass through a sieve. Depending on the sweetness of the strawberries, replace 1 tbsp with simple syrup. Set aside for assembly.

  • FOR THE ASHTA

  • Step 5: Blend together to get a creamy runny final product. If too thick, adjust consistency with water. Set aside for assembly.
