The ingredients are:
  • 2 (16 ounces) veal chops (1 inch thick bone in, 8 ounces each)
  • 2 cloves garlic
  • 1/4 teaspoon fennel seed
  • 1/4 teaspoon kosher salt
  • Fresh ground pepper to taste
  • Vegetable oil, enough to coat bottom of skillet

How to Make

  • Step 1: Crush the fennel with a mortar and pestle to a fine grind then add the garlic and kosher salt and work into a paste.

  • Step 2: Rub both sides of the veal chops with this paste and season with pepper; set aside.

  • Step 3: Drizzle the oil in a skillet and bring to medium-high heat.

  • Step 4: Cook the chops for about 5 minutes per side, until you have a light golden crust on each side.

  • Step 5: Allow to sit for 5 minutes and serve.
