Ingredients

The ingredients are:
  • 1 1/2 cup sliced yellow (thinly sliced)
  • 2 cloves garlic, pressed
  • 2 cups V-8 juice
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 3 cups cooked sliced turkey breast (cut in strips)
  • 2 tablespoons paprika (sweet paprika)
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup fat-free yogurt (or low-fat sour cream)
  • 4 cups cooked rice (brown or white)

How to Make

  • Step 1: In a large skillet over medium heat, cook onion and garlic in V-8 juice until tender.

  • Step 2: Dissolve cornstarch in water; stir 2-3 tablespoons of juice from skillet into the cornstarch mixture, then stir that back into the skillet mixture.

  • Step 3: Add turkey, paprika, celery seeds, salt and pepper.

  • Step 4: Turn heat up to medium high and stir until it boils.

  • Step 5: Reduce heat to medium low and simmer 100 minutes.

  • Step 6: Stir in yogurt or sour cream and simmer 2 more minutes.

  • Step 7: Serve over hot rice.
