Ingredients

The ingredients are:
  • 375 grams dried beans (borlotti beans, or other dried white beans)
  • 250 grams bacon (middle bacon rashers, chopped)
  • 1 large yellow onion (chopped)
  • 2 garlic cloves (minced)
  • 1/3 cup malt vinegar (brown vinegar)
  • 1/2 cup barbecue sauce
  • 2 tablespoons Dijon mustard
  • 1 teaspoon paprika (smoked paprika)
  • 1/2 teaspoon dried chilli flakes (optional)
  • 2 dried bay leaves
  • 2 cups water
  • 1 can (400 gram) diced tomatoes

How to Make

  • Step 1: Soak beans in water overnight and then drain and rinse.

  • Step 2: Cook bacon, onion and garlic in a frying pan over medium heat sirring occasionally, for 10 minutes.

  • Step 3: Transfer to a slow cooker and add beans, vinegar, barbecue sauce, mustard, paprika, chilli (if using), bay leaves and water and cook on high for 8-10 hours or on low for 12-14 hours.

  • Step 4: Once beans are tender, add tomato and cook on low for a further 30 minutes.
