Step 1: Soak beans in water overnight and then drain and rinse.
Step 2: Cook bacon, onion and garlic in a frying pan over medium heat sirring occasionally, for 10 minutes.
Step 3: Transfer to a slow cooker and add beans, vinegar, barbecue sauce, mustard, paprika, chilli (if using), bay leaves and water and cook on high for 8-10 hours or on low for 12-14 hours.
Step 4: Once beans are tender, add tomato and cook on low for a further 30 minutes.
