  • 1 medium eggplant, skin on, cubes 1inch cubes
  • 1 tablespoon olive oil
  • 8 medium mushrooms, thickly sliced
  • 1 540ml (19 ounce) can Mexi stewed tomatoes
  • 1 teaspoon janes mixed up salt
  • 1/2 teaspoon chili flakes
  • 1 cup onions, chopped
  • 4 tablespoons cilantro, chopped (optional)
  • 1/2 cup lite mozzarella

How to Make

  • Step 1: Pre-heat the oven 350f

  • Step 2: Mix everything together except cheese, place in lightly oiled casserole dish, cover with foil or a lid

  • Step 3: Bake for 45 minutes, uncover, add cheese on top, continue baking uncovered for another 15 minutes or until the cheese is golden
