Ingredients

The ingredients are:
  • 4 to 5 cups water (or vegetable broth)
  • 1 pound dry large lima beans (soaked overnight and drained)
  • 1/2 cup chopped yellow onions
  • 4 white button mushrooms (chopped)
  • 1/2 cup chopped carrots
  • 2 celery stalks (chopped)
  • 1/3 cup dry wheat berries
  • 1/2 teaspoon garlic powder
  • 1 1/2 teaspoons dried thyme
  • 1 teaspoon seasoned salt
  • 1 cup spinach leaves (loosely packed)

How to Make

  • Step 1: Place all ingredients in a slow cooker (I use a 4 quart) and cook on low for 8-9 hours.

  • Step 2: If you like it thicker, use only 4 cups liquid, but watch to be sure there is enough liquid for the soup to cook and not stick.
