  • 12 ounces sliced bacon (12 slices thick-sliced bacon, cut into strips or small squares)
  • 6 ounces white wine
  • 3 green onions, finely chopped
  • 1 pound pork loin chops (4 chops)
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 ounces butter
  • 1/2 cup whipping cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon parsley, chopped

How to Make

  • Step 1: Place bacon in a bowl and cover with wine and onions.

  • Step 2: Let stand for 30 minutes.

  • Step 3: Drain and reserve wine.

  • Step 4: Lightly season pork chops and dredge in flour.

  • Step 5: Heat butter and fry chops over moderate heat for 6 to 7 minutes per side. Add bacon and onions. Continue cooking for 2 to 3 minutes.

  • Step 6: Add the cream and the reserved wine and simmer for 10 to 12

  • Step 7: Minutes.

  • Step 8: Remove chops to a warm serving platter.

  • Step 9: Slightly reduce the sauce, add mustard and parsley.

  • Step 10: Adjust seasonings and spoon sauce over chops.
