Ingredients

The ingredients are:
  • 3 large eggs (separated)
  • Salt (pinch)
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla essence
  • 3 tablespoons all-purpose flour (plain)
  • 3 tablespoons corn flour
  • 1 rounded teaspoon baking powder
  • TO FILL
  • Cream (whipped)
  • Icing

How to Make

  • Step 1: Pre heat oven to 180c.

  • Step 2: Beat egg whites and salt until stiff. Gradually add the sugar and still beat until thick and glossy.

  • Step 3: Add egg yolks one at a time, beating well after each addition, then add the vanilla.

  • Step 4: Sift the plain flour with the corn flour and baking powder - do this 3 times, and the fold into the egg white mixture.

  • Step 5: Divide mixture into 2 well greased 18cm sandwich tins.

  • Step 6: Bake at 180c for 20-25 minutes.

  • Step 7: Cool on a wire rack, and when cooled fill with sweetened cream and ice with passionfruit icing.
