Step 1: Place onions & sugar in a large non-stick skillet. Cook over med-heat (stirring often) until sugar melts & onions are caramelized (about 30 min).
Step 2: Add sherry, burgundy, apple juice & soy sauce. Cook till liquids are reduced & season lightly w/salt to taste preferences (about 15 min).
Step 3: Allow to cool completely before using. Store under refrigeration.
