Ingredients

The ingredients are:
  • 1 1/2 cups small cauliflower florets (fresh)
  • 2 cups chopped watermelon (seeds & rind removed)
  • 1 1/2 cups strawberries (frozen unsweetened)
  • 1 container (6 ounces) Greek yogurt (strawberry yogurt)
  • 2 tablespoons strawberry preserves (optional)

How to Make

  • Step 1: In a small saucepan, cook cauliflower in enough boiling water to cover, about 10 min or until very tender. Drain & rinse w/cold water to cool quickly. Pat dry or twist in a clean kitchen towel to remove any excess moisture.

  • Step 2: In a blender, combine cooked cauliflower, watermelon, strawberries, yogurt & strawberry preserves, if using. Cover & blend until very smooth (stopping & scraping sides of blender as needed). Serve immediately.

  • NOTE FROM THE TEST KITCHEN: Make-Ahead Tip -- Prepare smoothies as directed. Transfer to an airtight freezer container. Cover & chill for up to 3 dys or freeze for up to 6 mos. If frozen, thaw in the refrigerator & then stir well before serving
