Step 1: In a small saucepan, cook cauliflower in enough boiling water to cover, about 10 min or until very tender. Drain & rinse w/cold water to cool quickly. Pat dry or twist in a clean kitchen towel to remove any excess moisture.
Step 2: In a blender, combine cooked cauliflower, watermelon, strawberries, yogurt & strawberry preserves, if using. Cover & blend until very smooth (stopping & scraping sides of blender as needed). Serve immediately.
