Step 1: Preheat oven to 325°F.
Step 2: Mix yogurt and oil in a mixing bowl. Add eggs, sugar and mix. Add corn, cheese, flour, corn meal, baking powder and salt.
Step 3: Mix until all ingredients are moistened.
Step 4: Lightly spray mini muffin cups.
Step 5: Fill each cup with about 1 tbs mixture.
Step 6: Bake for 13 to 15 minutes or until toothpick comes out clean.
Step 7: Remove from pan
