Ingredients

The ingredients are:
  • 16 ounces sweet potatoes (two potatoes, peeled and cut into 2 inch pieces)
  • 1 package (10 ounce) frozen corn
  • 1 package (10 ounce) frozen cut green beans
  • 1 cup chopped yellow onion
  • 1 1/2 pounds boneless pork loin (stewing pork meat, cut into 1 inch cubes, I used boneless pork loin)
  • 1 can (14 1/2 ounce) diced tomatoes (undrained)
  • 2 tablespoons chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground coriander
  • 1 cup water
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon ground black pepper

How to Make

  • Step 1: Combine undrained tomatoes,water,Chili powder,and ground coriander in a medium bowl and set aside.

  • Step 2: In the bottom of a 5 quart slow cooker, place potatoes,corn,green beans,and onions.

  • Step 3: Pour tomato mixture over vegetables,then top with cubed pork.

  • Step 4: Sprinkle pork with garlic powder and black pepper.

  • Step 5: Cook on low for 8 hours ans serve with your favorite crusty bread.
