Ingredients

The ingredients are:
  • 3 tablespoons oil (vegetable oil)
  • 1/3 cup finely chopped sweet onion
  • 1 cup diced beef steak (cooked)
  • 1 1/2 cups diced potato (leftover baked potato, if you want to leave the peeling on, that's up to you)
  • 3 large eggs (well beaten)
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon ground black pepper, or to taste
  • 1/2 teaspoon dried oregano
  • 1/3 cup shredded sharp cheddar cheese (optional but it's not an option for me ;))

How to Make

  • Step 1: Over medium heat in a medium size skillet add oil and heat until hot but not smoking add onion and cook until softened.

  • Step 2: Add potatoes and cook until lightly browned,remove from skillet and keep warm.

  • Step 3: If needed,place 1 Tablespoon oil in skillet then add steak and warm through.

  • Step 4: Return potato/onion mixture to skillet,pour eggs over all then sprinkle with desired amount of seasonings.

  • Step 5: Scramble all ingredients, until desired consistency for eggs are reached.

  • Step 6: If desired,sprinkle with cheese.
