Ingredients

The ingredients are:
  • 1 1/2 tablespoons Vegemite
  • 12 slices bread (crusts removed)
  • 60 grams butter (softened)
  • 24 (1 pound) cherry tomatoes (halved)
  • 1/2 cup grated tasty cheese
  • 1/4 cup chopped flat leaf parsley (roughly chopped)
  • 6 large eggs (beaten)

How to Make

  • Step 1: Spread each slice of bread with butter and Vegemite. Press bread into 12 x 1/3 cup capacity greased muffin pans.

  • Step 2: Place some tomato, cheese and parsley in each cup and then divide and pour in some of the egg into each muffin. Bake in a very hot oven 220oC for 10-15 minutes or until cooked.

  • Step 3: Cool slightly before turning out.

  • Step 4: Serve warm or cool.
