Step 1: Spread each slice of bread with butter and Vegemite. Press bread into 12 x 1/3 cup capacity greased muffin pans.
Step 2: Place some tomato, cheese and parsley in each cup and then divide and pour in some of the egg into each muffin. Bake in a very hot oven 220oC for 10-15 minutes or until cooked.
Step 3: Cool slightly before turning out.
Step 4: Serve warm or cool.
