Ingredients

The ingredients are:
  • 3/4 cup self-rising flour
  • 186 grams rice (rinsed, well-drained & cooled, 1 cup cooked)
  • 1 large egg (lightly beaten)
  • 1 cup milk
  • 2 green onions (chopped)
  • 1 pound shrimp (med-size prawns, shelled, cooked, cooled & chopped)
  • 1/4 cup olive oil (for frying)
  • Salt and pepper (to taste)
  • Old Bay Seasoning (optional to taste)
  • Tabasco (optional to taste)

How to Make

  • Step 1: Sift flour into a med-sized bowl, add rice & toss to mix slightly. Add egg, milk, green onion + prawns. Stir to combine.

  • Step 2: Heat oil in a large frying pan, drop by heaping tablespoons into oil & use a soup spoon (or an equivalent) dipped in the oil to flatten the fritters.

  • Step 3: Cook on both sides until golden brown & drain on absorbent paper. Repeat until all fritters are cooked, adding more oil as necessary during cooking.

  • Step 4: To Serve: Serve hot w/a sauce of choice such as shrimp cocktail sauce, tarter sauce, etc.
