  • 1 1/2 tablespoons bacon fat (or olive oil)
  • 3 tablespoons minced yellow onion
  • 1 teaspoon chili powder (preferably homemade or Gebhardt's)
  • 1 1/2 pounds fresh spinach (chopped)
  • Salt, to taste

How to Make

  • Step 1: Warm the bacon drippings or oil in a skillet over medium heat. Add the onion, and saute it briefly over medium heat, until it is softened.

  • Step 2: Mix in the chili powder, and cook until it is fragrant. Stir in the spinach, and heat until it is wilted and warmed through.

  • Step 3: Add salt to taste, and serve the dish warm.
