Step 1: Warm the bacon drippings or oil in a skillet over medium heat. Add the onion, and saute it briefly over medium heat, until it is softened.
Step 2: Mix in the chili powder, and cook until it is fragrant. Stir in the spinach, and heat until it is wilted and warmed through.
Step 3: Add salt to taste, and serve the dish warm.
