Step 1: In a small bowl, dissolve coffee in milk.
Step 2: In medium bowl, beat cream cheese, powdered sugar and vanilla with electric mixer on medium speed until well blended.
Step 3: Heat waffle iron, brush with oil if necessary.
Step 4: In a large bowl, beat eggs, sugar, oil and unsweetened chocolate with wire whisk until smooth. Beat in milk, flour, cocoa, baking powder and salt just until smooth.
Step 5: Pour about 1/2 cup batter onto waffle iron, close lid and bake about 4 minutes or until steaming stops.
Step 6: Carefully remove waffle; repeat with remaining batter.
Step 7: To serve, spoon one heaping tablespoon topping and one teaspoon of grated chocolate onto each waffle.
