Ingredients

The ingredients are:
  • 8 large eggs
  • 1/3 cup milk
  • 1/2 cup shredded cheese
  • 6 sausages (brown and serve sausage links, cut into coins)
  • 1/2 medium yellow onion (chopped)
  • 1/2 bell pepper (chopped
  • 1 teaspoon olive oil
  • 2 tablespoons pickled jalapenos (chopped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 green onions, sliced for garnish (optional)

How to Make

  • Step 1: Preheat oven to 400 degrees

  • Step 2: In a small skillet, saute onion, green peppers and sausages until the veggies are soft and the sausages are browned.

  • Step 3: In a large bowl, break eggs and beat with cheese, jalapenos, milk and salt and pepper.

  • Step 4: Add cooked veggies and sausage to egg mixture.

  • Step 5: Pour into an 8x8 greased pan and bake for 20-30 minutes, or until eggs are set.

  • Step 6: Garnish with green onions if using.
