Ingredients

The ingredients are:
  • 4 whole wheat bread buns (dinner rolls)
  • 4 large eggs (poached)
  • 4 tablespoons butter
  • Salt (pinch)
  • Pepper (pinch)
  • 8 ounces cooked ham (julienned)
  • SAUCE
  • 2 tablespoons minced yellow onion
  • 2 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 1 tablespoon chicken bouillon granules
  • 1 pint half and half
  • 2 tablespoons chopped fresh dill (finely chopped),could use basil
  • 2 tablespoons chopped fresh chives (finely chopped)
  • 8 fresh chives, for garnish

How to Make

  • FOR WHOLE WHEAT BASKET

  • Step 1: Cut off top of buns, then hollow out with knife tip. Brush both sides with melted butter. Season with salt and pepper.

  • Step 2: Bake in 350 degree oven for 5 minutes, reserve and reheat later.

  • Step 3: Poach eggs in 1 qt. sauce pan with 3 cups water and 2 tbsp. white vinegar.

  • Step 4: Julienne some ham: 2 oz for bottom layer of basket.

  • Step 5: Sauce:

  • Step 6: Melt butter

  • Step 7: Add onion , get transparent

  • Step 8: Add flour

  • Step 9: Get light brown

  • Step 10: Add cream (1/2&1/2)

  • Step 11: Stir like crazy

  • Step 12:

  • Step 13: Add bouillon

  • Step 14: Add herbs

  • Step 15: Let get thick

  • Step 16: Add 1 oz. herb sauce and 1-4 minute poached eggs.

  • Step 17: Top again with 2 oz. fresh herb cream.

  • Step 18: Garnish with 'crouton' lid offset on plate and chives.
