Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breasts (cooked on the grilled then cubed or sliced, about 4 breasts)
  • 1 large head chopped iceberg lettuce
  • 4 cups chopped red leaf lettuce
  • 2 mandarin orange (peeled and divided in wedges)
  • 2 cups chow mein noodles (the dry kind that you don't need to cook)
  • 1/2 cup sliced almonds (roasted)
  • SESAME DRESSING
  • 1/2 cup corn syrup
  • 3 tablespoons white vinegar
  • 2 tablespoons pineapple juice
  • 4 tablespoons granulated sugar
  • 1 tablespoon light brown sugar
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground mustard
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/2 cup oil (vegetable oil)
  • 1/2 to 1 teaspoon sesame seeds
  • Pepper

How to Make

  • FOR THE DRESSING

  • Step 1: Combine all the dressing ingredients except the vegetable oil and sesame seeds in a blender on high speed. Slowly add the oil to mixture through the hole in the lid – it will thicken and create an emulsion. Add the sesame seeds and blend for just a couple of seconds. Pour the dressing into a container (such as a dressing cruet), cover, and chill until needed.

  • TO BUILD THE SALAD

  • Step 2: Arrange iceberg lettuce in the bottom of a large salad bowl or on a plate, then the red leaf lettuce on top of the iceberg lettuce. Sprinkle the cooked chicken pieces alternately with mandarin orange wedges over.

  • Step 3: Next, sprinkle chow mein noodles, then last, the roasted sliced almonds on top of each salad.

  • Step 4: Add the desired amount of sesame dressing and serve.
