Step 1: Batter ... To a medium size bowl, add the flour, cornmeal, sugars, baking powder, and salt and mix well. Add in the beaten egg, milk, butter and oil until well combined. Fold in the cheese and pour in a 8x8" pan or you can use a round 8 or 9" cake pan too, well greased - I used a non-stick spray.
Step 2: Bake ... Heat the oven to 400 degrees, middle shelf and bake 20-25 minutes until the crust is slightly brown; and when a knife is inserted into the center, it comes out clean.
Step 3: Serve ... Cut and serve with butter, honey butter, or I enjoy mine with my jalapeno butter. My recipe for Jalapeno Lime Butter is also posted. And, as I mentioned - you can make these in a larger pan and they make great chili toppers. ENJOY!
