  • 1 (2 pound) head cauliflower (cut into small florets)
  • 6 cloves garlic (quartered lengthwise)
  • 4 ounces sliced bacon (4 strips, cut in 1/2 inch dice)
  • 1 tablespoon olive oil

How to Make

  • Step 1: Preheat oven to 375F. On a baking sheet, toss together the cauliflower, garlic slices, bacon and olive oil.

  • Step 2: Roast for 25-30 minutes until bacon is crisp and cauliflower is cooked through. Season the roasted cauliflower with salt and pepper to taste.

  • OPTIONAL: You can sprinkle the roasted cauliflower with grated cheese of your choice, right after it comes out of the oven.
