Ingredients

The ingredients are:
  • 5 cups sliced beets (canned, sliced julienne)
  • 1 Granny Smith apple, peeled, cored and sliced julienne
  • 1 white onion (peeled, cut in half and then sliced thinly)
  • 3/4 cup low-fat sour cream
  • 3/4 cup low-fat mayonnaise
  • 1 tablespoons horseradish (prepared)
  • 1 pinch white pepper

How to Make

  • Step 1: Mix sour cream, mayonnaise, horseradish (they had 1 T, I dialed it back, feel free to add more if you wish) and white pepper together well.

  • Step 2: Mix beets, apple and onion together.

  • Step 3: Mix beet mixture with sour cream mixture. Stir well to blend. It will turn pink.

  • Step 4: Can be served chilled or at room temperature
