Step 1: Mix sour cream, mayonnaise, horseradish (they had 1 T, I dialed it back, feel free to add more if you wish) and white pepper together well.
Step 2: Mix beets, apple and onion together.
Step 3: Mix beet mixture with sour cream mixture. Stir well to blend. It will turn pink.
Step 4: Can be served chilled or at room temperature
